Eso Artisanal Pasta elevates the flavors on The Great Food Truck Race, interview

The teams on The Great Food Truck Race Season 15 have had many people talking. Beyond the big personalities, the chefs on the food truck are pushing the food truck cuisine in flavorful directions. With Eso Artisanal Pasta, the fine dining chefs are proving that a mobile kitchen doesn’t limit the flavors and food on the plate.

Over the years, the food truck has proven to be a creative space. While some people might think that the white tablecloth table is the only place for innovative cuisine, that concept has been pushed aside. Just because food is served from a window doesn’t mean that it isn’t on par with some of the celebrated chefs in a city.

While Food Network viewers can debate whether personalities can overshadow the food on The Great Food Truck Race Season 15, the reality is that Eso Artisanal Pasta knows what people want to eat. Delicious flavors, attention to detail and creativity on a plate will always win in the end.

Recently, FoodSided spoke with Eso Artisanal Pasta about its Great Food Truck Race Seasons 15 experience, how it leverages its success as a food truck and why that fresh pasta just tastes so good.

Anyone who has watched a food television competition or chef on television make fresh pasta might be in awe. Although there are a few hacks or shortcuts along the way, the reality is that there is a difference.

When asked, Eso Artisanal Pasta commented, “I wouldn’t say fresh pasta is necessarily better than dried pasta, it’s just different. The texture is much more delicate and the flavor of the flour, egg, and any other ingredients used to make variations of fresh pasta are much more prominent.”

As seen on The Great Food Truck Race Season 15, the team has made fresh pasta on occasion. So, what is the trick? They said, “The trick to making the best fresh pasta is simple, get your hands on the highest quality flour imported from Italy that you can find!”

The team from Eso Artisanal Pasta learned their skills in various high-end restaurants. During various episodes, guests have been enticed by the call of come eat at former Michelin chefs’ food truck.

When asked about their culinary experience, they said, “Working in high end restaurants gives us the advantage of knowing how to deal with various extremes that come with any food-oriented business. Whether it’s receiving a lot of orders at once or screwing up a recipe during crunch time, when you’ve spent years in the game at a high level you know how to react accordingly and solve problems without a fret.”

That ability to adapt is key to any successful restaurant or food truck. But, a helping hand can lead a business to a more successful endeavor. For Eso Artisanal Pasta, they had received a grant from Visa and the Jets.

When asked about how the grant impacted their business, they shared, “The small business grant from the Jets came with incredible timing! It’s a funny story actually, we applied for that grant in 2020 but apparently, we missed the cutoff to receive the award in 2021, meaning we were then first in line for 2022. Of course, we had absolutely no idea that this was the case and simply assumed that our business didn’t make the cut the first time around. We received the check just a week before we left for California for The Great Food Truck Race, so having that cushion while we were away provided us with some extra peace of mind and allowed us to gear up for shipping our products nationwide!”

Still, the additional funds is only one component to a successful business. Loyal customers or foodies excited about getting that taste is vital.

Eso Artisanal Pasta said, “Although our only food truck experience was on the show, I can confidently say that word of mouth is probably one of the strongest forms of marketing- not just for store fronts and food trucks- but for any business. You have to have a good reputation that people are willing to speak openly about with their friends and loved ones!”

As Food Network fans watch The Great Food Truck Race Season 15 unfold, the team had many takeaways from the experience.

They shared that “We wanted to learn more about the California demographics and what it takes to run a food truck and we successfully completed these tasks. Our biggest takeaway has been to try to employ some of our selling tactics from the show back at home, such as posting up outside of our storefront and handing out samples for people to try!”
